Fried Salmon with Salad

INGREDIENTS

  • 200g x 2 Salmon fillet, skin on

  • 500g Cherry tomatoes, halved

  • 500g Cucumber, cubed

  • 150g Organic red onions, peeled

  • 50g Kalamata olives, pitted and halved

  • 100g Organic feta cheese

  • 1 lemon, juiced

  • 10ml Organic olive oil

  • Salt and pepper to taste

  • Fresh chopped mint

 

DIRECTIONS

  1. Take out the salmon and leave at room temperature for a while

  2. Season with salt and pepper

  3. Heat olive oil in a pan and place salmon skin side down

  4. If the salmon starts changing color halfway, flip over

  5. On medium heat, let it fry for another 3 to 4 minutes and set the pan aside

  6. Cut the onions in half and slice thinly

  7. In a large bowl, mix the tomatoes, cucumber, and olives.

  8. Mix the olive oil with lemon juice and salt and pepper and stir until it becomes a smooth dressing.

  9. Mix the dressing with the vegetables and place on a large plate.

  10. Crumble the feta cheese over the top and garnish with the chopped mint.

  11. Drizzle with some good olive oil and serve with the fried salmon
