Take out the ham of the chiller and let it sit at room temperature for an hour.
In a large pot with water add your bay leaf, peppercorns and salt and pepper.
Place the ham inside and simmer on medium heat for 30 to 45 minutes.
Take out the ham and set aside to cool down.
Prepare a baking tray and pre-heat oven to 160°C.
Take the ham and cut crisscross injunctions on the skin side of the ham.
Heat up the honey in a small pot and brush and rub all the way around the ham.
Place on the baking tray and put in the oven for 30 minutes.
Turn up the heat to 200°C and leave it for another 15 to 20 minutes.
Take out and cover with aluminum foil to rest for 30 minutes.
Serve on a large plate or cutting board and carve on the table.
