Fennel Salad with Smoked Salmon and Orange Vinaigrette

  • 1pc Organic fennel bulb

  • 50 g Smoked Salmon

  • 1 pc large orange

  • 10 ml Avocado Oil

  • Salt and Pepper


  1. Wash the fennel and cut very thinly with a knife

  2. Place the sliced fennel in Ice water. This will ensure to keep the fennel crispy

  3. Peel and segment the orange

  4. Juice the rest of the orange in a bowl and mix with oil and season with salt and pepper

  5. On a flat plate place the fennel in a circle, season with salt and pepper and sprinkle with avocado oil

  6. Roll the salmon into rose shape and place on top of the Fennel in some distance around

  7. Place your orange segments around the plate nicely and sprinkle the orange vinaigrette over the Plate

  8. Garnish with green Fennel tops
