Herb Crusted Crispy Pork Belly Roast

  • 1kg Danish organic pork belly rolled and tied

  • Salt and pepper

  • Freshly ground pepper

  • 3 sprigs Rosemary, finely chopped

  • 3 sprigs of Thyme, finely chopped

  • 1 bunch of Italian parsley, finely chopped

  • 20 g of English mustard

  1. Preheat your oven to 180°C center grade

  2. Leave the pork belly in room temperature for around 30 minutes and dry with paper towels

  3. Season with salt and pepper and place on baking tray, roast in the oven for 2 and 1/2 half hours

  4. After 2 1/2 hours remove the pork belly

  5. Brush with mustard and roll it in the herbs until completely covered

  6. Turn up oven to 230 °C and roast for another 30 minutes

  7. Remove from oven and rest for 30 minutes
