Fried Salmon with Salad

200g x 2 Salmon fillet, skin on
500g Cherry tomatoes, halved
500g Cucumber, cubed
150g Organic red onions, peeled
50g Kalamata olives, pitted and halved
100g Organic feta cheese
1 lemon, juiced
10ml Organic olive oil
Salt and pepper to taste
Fresh chopped mint
Take out the salmon and leave at room temperature for a while
Season with salt and pepper
Heat olive oil in a pan and place salmon skin side down
If the salmon starts changing color halfway, flip over
On medium heat, let it fry for another 3 to 4 minutes and set the pan aside
Cut the onions in half and slice thinly
In a large bowl, mix the tomatoes, cucumber, and olives.
Mix the olive oil with lemon juice and salt and pepper and stir until it becomes a smooth dressing.
Mix the dressing with the vegetables and place on a large plate.
Crumble the feta cheese over the top and garnish with the chopped mint.
Drizzle with some good olive oil and serve with the fried salmon
