Fried Vegetables in Beer Batter

INGREDIENTS
  • 100g broccoli

  • 100g cauliflower

  • 1 red bell pepper

  • 1 zucchini

  • 1 brown organic onion

  • 1 cup corn starch or all- purpose flour

  • Rice bran oil for frying

  • Salt and pepper

Batter:

  • 2 eggs/ free range

  • 1 tbsp extra virgin organic avocado oil

  • 1 cup of chilled lager beer

  • 2 cups of flour

  • salt

DIRECTIONS
  1. Combine all the Ingredients for the batter in a large mixing bowl and mix thoroughly until you have a smooth batter.

  2. Then prepare your vegetables. From the cauliflower and the broccoli make small florets. The zucchini, bell pepper and onions cut around 1/2 inch slices out of it.

  3. Mix the corn starch with salt and pepper and toss your vegetables in it.

  4. Heat your rice bran oil in a large pot or deep fryer if available to 190 °C.

  5. Take the vegetables out of the corn starch and remove the excess.

  6. Slowly dip piece by piece into the batter and then into the hot oil.

  7. Cook for about 3 minutes until golden brown and crispy.

  8. Make sure to season with salt and pepper while still hot and serve with some lemon wedges on the side.

SOUTH STREAM TIPS

The batter can be also done with white wine or organic milk. Can use other vegetables as well, like eggplants or red onions. In Italy, this is called Frito Misto and is very popular. Serve with mayonnaise or plain Yoghurt on the side. Sprinkle with fresh chopped herbs or add the herbs to your batter.
