Zucchini & Corn Fritters

INGREDIENTS
  • 3 cob of corn BBQ & stripped

  • 300g green zucchini

  • 200g yellow zucchini

  • 50g chives chopped in 1” lengths

Chick Pea Batter

  • 1 can of soda water

  • 7 egg whites

  • 600g chick pea flour

  • 1 tbsp cumin powder

  • 1 tbsp sweet paprika

  • 1 tbsp zatar mix

  • 1 tbsp coriander powder

  • 1 tbsp garlic powder

  • Salt & cracked black pepper to taste

DIRECTIONS
  1. For the batter, mix the soda water the egg whites and the chick pea flour together until you have a smooth batter.

  2. Add the spices and herbs to your batter and mix the batter.

  3. Grill the corn on the BBQ or boil it in water until cooked. Then strip of the corn from the cob.

  4. Grate the zucchini with a grater in fines strips.

  5. Tips: the zucchini is to mix it with some salt and let it sit for a while. The salt will draw out the moisture of the zucchini and then you can press the water out with your hands or a cloth. This is to prevent the Fritter from getting soggy.

  6. After that combine the corn the zucchini and the chives together to a burger shape or even a ball. If the mix doesn’t hold together you can add an egg yolk and some flour to make it a bit easier to bring in shape.

  7. Then you can roll your balls or burgers into shape and fry them in hot oil, preferably sunflower, peanut, canola or even coconut oil until golden and crispy. You can also pan fry them in some olive oil and butter.

SOUTH STREAM TIPS

To serve this Fritters with some flavoured yoghurt on the side. You can add lemon zest and Juice to your yoghurt or some nice chopped herbs. For those who like it spicy can add some siracha or harissa to the yoghurt. A nice fresh mix salad on the side and you have a summery fresh dish.
