Salmon and Young Potato Warm Salad with a Lemon Yogurt Dressing

  • 500g Skinless salmon fillet

  • Salt and pepper

  • 1tsp Lemon juice

  • 1tsp Olive oil

  • 1kg New potatoes

  • 200g Greek yogurt

  • Fresh chopped mint



  1. Season the salmon with salt and pepper and mix with the olive oil

  2. Bake in a preheated 180°C oven for 20 minute, set aside

  3. Boil the new potatoes in salted water until tender

  4. Strain them and let cool down for a while

  5. Cut the potatoes in half

  6. In a large bowl, mix the yogurt with lemon juice and some chopped mint

  7. Add the potatoes and mix thoroughly

  8. Pull the salmon into chunks

  9. Place the potato salad on a plate and top of with the salmon chunks

  10. Garnish with fresh chopped mint
