Grilled Swordfish with Olive and Tomato Salsa

INGREDIENTS
200g Swordfish x 4pcs
1 lemon, juiced
1tsp Olive oil, extra virgin
Salt and pepper
1 box Cherry tomatoes, halved
1/2 red onion, finely chopped
1 jar Olives, halved
1 sprig coriander, finely chopped
DIRECTIONS
For the salsa combine tomatoes, onions, olives and coriander in a bowl
Add half of the lemon Juice and some olive oil. Mix thoroughly
Season the fish with lemon juice, salt and pepper
Heat olive oil in a pan on high heat
Fry the fish in the pan for 5 to 7 minutes, turning occasionally
Set aside and let it rest for a couple of minutes
Serves the fish on a platter and spoon over the salsa
