Barramundi en Papilotte

INGREDIENTS
200g x 4pcs Barramundi fillets
2pcs Organic lemons
1 jar Colavita lives pitted
1 box Cherry tomatoes
1 sprig of Thyme
50ml Organic avocado oil
Salt & Pepper to taste
DIRECTIONS
Preheat oven to 180 °C
Cut the olives and cherry tomatoes in halves
Prepare a baking tray and brush with olive oil
Cut your parchment paper into 4 rectangular pieces
Place your lemon slices on the bottom and fish fillets on the parchment paper, 1 paper 1 fillet
Season the fillets with salt and pepper
Add olives, cherry tomatoes and thyme to each fillet
Now fold your parchment to a parcel and make sure is completely sealed and place on the baking tray and bake for 15 to 18 minutes
Remove from oven and let it rest so the juices can set
Place the parcels on a platter or wooden board and serve
