Moules Frites

INGREDIENTS
1kg Fresh Mussels
1pc Organic onion, finely chopped
1pc Organic carrot, thinly sliced
1pc Red chili
1 sprig of Thyme, finely chopped
100ml Avocado oil
200ml White cooking wine
2tbsp Crème fraiche
For the chips:
2 large Dutch cream potatoes, peeled and sliced into chips
3tbsp Plain flour
1 Liter Rice bran oil, for frying
Salt and pepper to taste
DIRECTIONS
Wash and clean the mussel under cool water, make sure they are cleaned properly. If any are open already, discard them
Place a large saute pan on your stove and add the oil and let it become hot
Add your veggies and the thyme and cook for 1 to 2 minutes
Toss in all your mussels and shake them around and cover with a lid and cook for 1 to 2 minutes again
Pour in your wine and cook for another minute so the wine reduces by half
Cover again with a lid and cook for another minute and set aside
Cut your potatoes into fries and let them sit in cool water for a while, this will ensure to get rid of the extra starch which makes them soggy.
Take out the fries of the water and pat them dry. Make sure they are really dry. Mix them with the flour thoroughly
Heat up your oil until smoking hot, add your fries to the oil and fry until golden brown and crispy
Season with salt and serve with the mussels

Traditional Belgium national dish usually served with some Aioli or Mayonnaise and a good Belgium beer. A hot fresh baked Baguette on the side to soak up all the juices from the pan.
