Salad with Roasted Figs and Burrata

  • 1kg Figs, cut into quarters

  • 2tbsp Manuka honey

  • 1pack Hydroponic rocket

  • 50g Walnuts, chopped

  • 1pack Burrata cheese

  • 50g Prosciutto di Parma

  • 1tsp Extra virgin olive oil

  • 1tsp Balsamic vinegar di Modena

  1. Place the figs onto a baking tray and drizzle with honey

  2. Place into a pre heated 180 °C oven for 10 minutes

  3. Take out the figs and allow to cool

  4. Wash the rocket and drain of the excess water. Place the rocket salad on a large round plate or platter

  5. Add the Burrata cheese in the middle of the platter and make a cross in it so it opens up like a flower

  6. Place your thinly sliced Prosciutto slices around the cheese

  7. Sprinkle the walnuts all over. Drizzle with olive oil and Balsamic vinegar


A very refreshing spring or summer dish. You can also add any kind of Citrus fruit like Orange or Grapefruit to this. Serve with some nice freshly baked Ciabatta
